Ginger, Honey and Lemon Zinga
Ginger is an anti inflammatory, anti oxidant power house. It’s relatively inexpensive here in New Zealand. Prepare it as shown and you’ve got the perfect pick-me-up at your fingertips.
Marinating the ginger root pieces in its own juice, essential oil and honey, softens the ginger making it super yummy to eat. Expand your taste sensation with the addition of fennel seeds - they are packed with fiber, potassium, magnesium, and calcium — all of which are essential to heart health.
I like to store my culinary oils in a separate handy box in the kitchen. Got this beauty from my local Trade Aid store. Surround yourself with items you love, to bring joy to your day. Less is best is the principle to apply to this joy delivery system - navigating clutter just robs you of love and energy.

- combine and let sit 24 hours
Ingredients
- a fresh ginger root
- Manuka honey
- 1 drop of essential oil of your choice
- my favourites for this are lemon, ginger, fennel.
Directions
- Peel and cut your fresh ginger root into slices or small chunks, your preference
- Place the cut ginger into a glass container and put a large teaspoon of manuka honey on top.
- Close the container. Let this mixture sit on the bench for 24 hours.
- You’ll see the ginger juice and honey have combined to create a liquid bath for the ginger slices. Add a drop of lemon (or your choice of) essential oil.
- Shake and refrigerate.
- Eat as desired, Also wonderful to use in cooking.
